Eat The Rainbow!

That was a term someone mentioned to me years ago--- "Eat The Rainbow" in an effort to eat healthy and well-rounded. This is my rainbow veggie roast consisting of cauliflower, mini white & red potatoes, carrots, yellow pepper, Brussel sprouts, leeks, purple potatoes... sprinkled with truffle salt, chopped garlic, herbes des Provence & a drizzle of oil.

Roasted at 450 for about 25 minutes. Gauge the timing based on the thickness of the slices and the amount of vegetables.

FINISH: Grate Parmesan cheese or squeeze some lemon over top when finished cooking, but I tend to drizzle another VERY light-handed dose of herbed-olive oil before serving.
